Training and Interviews.

And, I’m officially trained! I made it through the 12 hours of training last week for the Minnesota Literacy Council. (12 hours of training in one week = why I didn’t blog last week.) I can officially tutor & teach English to refugee’s and immigrants.

I am so excited and can’t wait. I need to go next week to the location I’ll be teaching at to sit in on a few classes & observe. Then, I can officially take over my own class. Really. Absolutely. So. Excited.

We have an interview tonight. The back story is I would LOVE to get another dog but both Carlos and I know we can only handle Iggy full time. If we go out of town, it’s somewhat easy to find someone to take Iggy but it would be harder to find someone to watch two dogs. So instead, we decided to sign up to watch other people’s dogs while they are on vacation. It’s through a local company called Pets Are Inn. We filled out an application a few weeks ago and now tonight, they come out to interview us, see our house and meet Iggy.

Iggy had a grooming appointment this past weekend, to make sure he looked his best.

While Iggy was getting groomed, I met Jen at the gym and went grocery shopping. Then, I came home to make lunches for the week. I was craving snacky lunches so I decided on some chicken, carrots, grapes, cheese and applesauce.

It’s been forever since I’ve had applesauce and am realizing how much I love it! I also made a few salads to take along for the afternoon, just so I could get some more veggies into my day. Normally I try to mix my weekly lunches up but this week, was excited enough about my lunches to eat the same thing.

Sunday dinner was turkey feta burgers with homemade french fries. Here’s Carlos’ plate: Picture1

He loved it. I tried to make sweet potato fries for myself but I ended up burning them so I grabbed one of the salads I made for lunch instead. Maybe a few of Carlos’ fries fell into my mouth too :)  I don’t have a recipe for the turkey feta burgers because I made it up – sorry!

I didn’t work out this morning but after getting up and showering, realized I really do want to work out today. I packed a bag and think I’m going to squeeze a lunch-time workout in. I haven’t worked out over lunch in a long time and am looking forward to it.

Carlos and I are going to the MN Wild game tomorrow for work – it’ll be my first time going to a hockey game. I really want a hot dog but I’ve realized hot dogs give my stomach aches. Maybe I can convince Carlos to get a hot dog and then I can just steal a bite. That’s marriage, right? Compromising? HA!

Also, I got lunch boxes like that for Christmas and I just love them!!!

I think you have mentioned the containers that you have used for your lunches before but I am curious what they are, and where you have gotten them

I like making lunches for my husband and to go dinners for my son to take to his after school job and those look like they would be convenient to use.

The ESLtraining sounds interesting and I am sure as you work with people it will add dimension to your already full life.

What breed of dog is Iggy? He looks like he loves his kerchief. So cute!

Enjoy the hockey game, the last time I went it was to a North Stars game, so I am clearly showing my age. :)

I love that you are throwing your own meals together sans recipe! ;-) And I didn’t know Pets Are Inn existed! We are so lucky that right now our friend comes to stay at our house with her dog when we go out of town.

P.S. I never order fries because I know my husband will and that means I can have a few. ;-) Yes, that’s marriage. Tee hee.

Jen, I think this is so awesome. You’ve actually inspired me to look for a literacy-related volunteer opportunity in my town. What a great way to make a difference for people! I hope you enjoy doing it.

I do the same thing with my lunches. Espeically in the summer when I have a salad for lunch almost every single day. I find it much easier to make several at a time and have them ready to grab out of the fridge each morning on my way out the door. If I had to take the time to make a salad everyday, it wouldn’t happen.
