Nice adult lunchable (a pita pizza)

I’d been craving it for awhile but wasn’t really interested in a greasy pizza from the chain-restaurant. I wanted my own version. One I could make and be proud of.

And I wanted it for lunch.

Talk about throwing a kink in my plan. Sure, it’s somewhat easy to make a healthier pizza at home but for lunch? While at work?

I carefully chopped the yellow peppers. And the red peppers. And the zucchini. And the ham.

I had a plan.

A pizza plan.

I walked into the our break room with my carefully prepped pizza toppings and spread out. For the “crust,” I brought with a pita pocket and opened it up.

I carefully assembled my pizza, moving out of the way for those trying to get into the drawers I was inadvertently blocking. At one point, one of my co-workers walked by and proclaimed:

Nice adult lunchable you got there!

I smiled to myself. My coworker had walked out of the break room and I finished up my pizza. I put it in the toaster we had and waited. And waited. And waited. Ooohh, I could smell the veggies roasting, the cheese melting and the pita crust toasting.

Within about 6 or 7 minutes, it was done.

Mission accomplished. Delicious mission accomplished.

Pita Pizza

- 1 cup chopped veggies
- 1/2 cup chopped ham
- 1/3 cup pizza sauce (I used marinara sauce)
- 1/4 cup shredded mozzarella
- 1 pita

Directions: Carefully cut pita, splitting into two rounds. Lay pita out flat, top each side with sauce. Sprinkle cheese evenly. Add veggies and ham. Toast for 6-7 minutes, depending on toaster. Remove and enjoy!

I often suffer in silence as my coworkers order pizza week after week, I discovered yesterday that we actually have a pizza toaster thing in our office! I am SO going to have to do this! The pita would totally be better texture wise for what I crave when they have pizza than the Lavash pizzas that I make at home.

Great idea! We do something similar at my house, but we use jalapeno cheese fat free tortillas. They come in lots of flavors, sometimes the plain ones are good too. I like the Pita though, need to try that soon.

Looks yummy! I’m coeliac so GF pizza base options are a bit more limited… but there’s nothing like the smell of pizza cooking….

I’m with Lindy – wish we had a toaster at work too. I think the microwave would make it a pile of mush.

How creative though Jen! I love seeing other people’s ideas for healthy and quick work lunches. It can really be a challenge unless you plan ahead.

You are lucky to have the toaster oven at work. This is the only kind of pizza I allow myself anymore. I usually use the Joseph’s pitas and lots of veggies. Great lunch or dinner.

This goes to show that Toaster Ovens should be a requirement in all workplace lunchrooms in America. Should we start a movement? ;)

I used http://www.caloriecount.com. It has a recipe builder on it that will provide nutritional information. Very easy to use!

Awww…I used to love lunchables (actually, I would probably still love one now, but have been trying to avoid them). Great idea, Jen – it looks and sounds YUMMY!

Love this!! I am a SAHM and I am always on the look out for good healthy light lunches and I don’t always want a salad!
