I decided it’s time to put more effort into cooking. I love to do it, but haven’t been in the “mood” to do it lately. It’s a lot harder to eat no-so-good-for-you food when you have all of the ingredients for amazing, healthy meals in your house! It’s also a lot easier to eat well come spring and summer when there’s a lot more produce to choose from.
These meals always taste better, usually don’t take long, and are far healthier. Remind me of this next time I complain about cooking, will you?

That salad looks so yummy! I’ve recently fallen in love with mixing greens and berries – simple but so delicious!
I started filling up my salads with mangoes, apples, and berries just for some sweetness (and to get the greens down), but 4 years later, I just love the way they taste! This salad was amazing!
I’m working on reminding myself of this right now too. Home cooked dinners with TONS of veggies are so much better than quick meals!
It’s hard some days, I know how that goes. Today I made mini meatloaf muffins, and tuna casserole to freeze, too. If it’s there, we’ll eat it. If it’s not…who knows!

Oh my goodness your plate look amazing. I’m not a green eater but I might be willing to try that! I with you, when I put the effort in, food is amazing. I often wonder why I’m not willing to with such great results. Keep up the great work!
