Dinner. Carlos ate left-over greasy pizza which from his pool league on Tuesday evening. I wasn’t going to touch it and knew exactly what I was craving. A regular bowl wasn’t going to work — I needed something BIG. Something that could handle not just a wimpy salad but a SALAD.
Ham
Feta cheese
Dried cranberries
Raw almonds
Green grapes
Broccoli slaw
Dollop of hummus
I dug around in my cupboard and found a mega bowl. As in, you know the set of 3 mixing bowls you buy a Target? Yeah, the biggest of them all bowls. And then I filled it with a bed of lettuce + toppings that made my heart melt.
Carlos always asks me why I don’t sprinkle the ingredients all over the salad but instead, put them in their own little sections. My response? Because it looks photographs better this way! {Has my eating really come down to how it is photographed?}
But… when it is time to eat? I get it all mixed up in there together!
Nothing short of amazing. Well, except for all the lettuce stuck in my teeth after I finished. I hate flossing {and I know I’m not alone here} but I found a way I can get my flossing done with, quick and for the most part, painless.
Heart Monitor Update:
Day 1 was successful, I think. I didn’t push the buttons because I didn’t feel anything. There were a couple times when I got up from my desk to either go to the bathroom or printer and forgot the phone/transmitter thingie on my desk. I’m suppose to keep it either with me or <10 feet away at all times. I wasn’t wearing anything with pockets so maybe for the next couple of weeks, I’ll just have to make sure I’m wearing pockets.
Other than that, all is well in the heart monitor arena of my life – but it’s only been 1 day so we’ll see how this goes! I promise I won’t update day by day!
EasyLunchBox System
I often get asked where I got the lunch containers I use often. They are part of the EasyLunchBox system and I highly recommend them.
My favorite part about the EasyLunchBox system? Aside from the little compartments? Is that the company started with an idea inside the head of a mom. Mom’s are so smart, I tell ya! {Love you mom, I miss you so much and wish I had a million dollars to fund all the ideas for ventures you had!}

I do this all the time. At least weekly for dinner or something. That is why I too am a PRIOR fat girl. Love it!
One thing to take note of is if caffeine or alcohol affect your heart rate… with my dad’s situation, his heart would race after just a few sips of caffeine.
good point about the caffeine and alcohol – I don’t drink much of either. Maybe 1-3 glasses of wine A MONTH. I do start every day with a mug of coffee but I don’t feel my heart racing {outside of “normal” energy from coffee}.
Oh how I wish I craved salad’s like this. Do you use dressing? I just can’t imagine eating a whole bowl filled with lettuce and no dressing. I too hate flossing so I will have to check those out. I am sure my dentist would appreciate it if I started flossing! Thanks for all the tips!
Dressing — such a up in the air thing with me! Sometimes I use a raspberry vinaigrette that I get from my local co-op but 75% of the time, I don’t. You want to know the trick? FRUIT! Seriously: drop some mandarin oranges on that baby and there will be enough juice from the oranges covering all your lettuce and you won’t even notice! I also don’t use dressing when I use hummus because of the same thing. Although hummus is thicker than most salad dressings, I find that I am completely content without adding anything else. And finally, here is my last hint – it is all in your mind. If you think you need dressing, you probably will. But if you are so excited about mandarin oranges being your “dressing” then chances are, you will eat the whole thing and be so completely satisfied you won’t even realize there is no dressing! Same thing goes for sandwiches. People think they need cheese on a sandwich but chances are if they skipped it, they’d probably put so much other fun stuff on their sandwich that they won’t even realize it isn’t there. Okay, long winded comment done
You come to my house and we can eat dressing-less salads together, okay?
I always used to try and recreate restaurant salads at home. I always fell short, but now that I am cooking as a vegetarian I am getting a lot better with creative, healthy, salads.
Love the Hugh Jass salad! I”ve been having the same types of salads lately, and it helps to put it in a giant bowl so it doesn’t all spill out when you get to mixin’.

My favorite Hugh Jass salad is:
greens, black beans, corn, grilled chicken, green onions, and just a little light ranch dressing mixed with hot sauce. Really good. I like to use big ole’ mixing bowls for the same reason as someone else stated above. You don’t spill out half your salad when your mixin’ that baby up!! Now I must put salad on the menu for next week!
I made a salad last night, ate half and decided it wasn’t big enough, and added more spinach. It was like the never ending salad! Have you ever tried the dip your fork in dressing thing? I’ve always eaten my salads that way, but I guess it’s weird to do.
I love gigantic salads too. A regular bowl just won’t do, and who can feel guilty about a giant bowl of veggies? Also, love those flosser things, I had such trouble flossing before I found those…

I love those flossing pick things! I keep a package in my car and floss while commuting! It keeps me honest when I say I floss most every day! Also handy for times when we go out and I feel the need to floss when I get back to the car (stuck popcorn or whatevers)

Maybe get a cell phone holder that you can clip on? Not always the most attractive thing but then you don’t have to try and remember it all the time…
Might I suggest if you don’t have pockets you use a small shoulder purse and where is across your body. I know this might sound lame but you could keep it on you all during the day without putting it off and on. I used this method for my drainage tubes from my abdominoplasty and it worked perfectly.
Dang that salad looks good. I have been craving one forever and just need to get my booty to the store to get all the ingredients. Love the idea of hummus as a dressing!
