A perfect combination: Meatloaf & Cupcakes

Okay – I’m not going to talk in third person for the entire post, I promise. But I did want to share with you a FANTABULOUS idea that I stole from Monica over at Run Eat Repeat. I’m talking about cooking my way to a man’s heart.


Monica, you are BRILLIANT. The minute I saw her first picture, I knew exactly what I was going to surprise Carlos with for Valentines Day. I took the meatloaf cupcakes a step further and lined the muffin tin with bacon – because if you know this blog, you know Carlos’ love for bacon is right next to his love for me πŸ™‚

I started with my go-to meatloaf recipe:

  • 1 pound ground beef
  • 1 cup bread crumbs
  • 1 egg
  • salt
  • pepper

To make the meatloaf cupcakes a little special for last night, I added:

  • 1/4 cup feta cheese
  • 1/4 cup chopped green peppers

I mixed all the meatloaf ingredients together and then set it aside in a bowl while I got the bacon ready.

Lined with bacon.

I filled each with the meatloaf mixture, just right to the top of the pan and then stuck it in the oven on 350 degrees for about 30 minutes. As it was cooking, I made some mashed potatoes and gravy, as well as some broccoli (with bacon, for Carlos!)

The final product? Lay your eyes on this….

All weekend, I told Carlos how excited I was for dinner tonight and that I was going to make an amazing dinner for him. And I told him he was responsible for dessert. Carlos did not disappoint. He called Stacy from KitchenWerks because she is an expert when it comes to all things food! Stacy pointed Carlos to B.T. McElrath, one of the best chocolatiers in North America…and he started here in Minneapolis!

I’ve never experienced B.T. McElrath chocolates before and am impressed. Carlos bought the dark chocolate truffles which melted in my mouth like none other! A pound of these chocolates will run you about $50 however I don’t need a whole pound!

I couldn't wait for Carlos to take the picture, I snuck a bite of the middle piece while waiting for Carlos to wipe smudges off the lense.

I had 1 3/4 piece, Carlos ate 1/4 piece and then, we put the box way up high. It was the perfect end to a perfect evening.

And now this Tuesday morning, I must get going because Carlos leaves a little early on Tuesday mornings so I need to get breakfast started!

  3. Those looked AWESOME!!! We made similar ones for the girls a while back, mini-meatloaves from the Sesame Street cookbook. I wish I would’ve topped them with potatoes and gravy like you did! Sesame Street called for smiley faces of ketchup on the top, and the girls loved it.

  13. Oh my goodness – those meatloaf cupcakes are incredible. Wow, I never thought I could make a meal to perfection for my hubby, but this may be the creation he has been waiting his whole life for. πŸ˜‰

  14. I gave these a test run. With a few modifications, they’ll definitely be a go-to in my repertoire. One question: Is there a way to pre-cook the bacon so it will mold to the pan but not leave all that grease? There was a half-inch in each spot when I took them out, and they still soaked a paper towel through.
