First off, did you see the post yesterday about the bracelets? So many of you have emailed, sent messages on Facebook and Twittered asking about how to get one–I worked out a deal with the vendor and got some extra’s so click over and order yours!

Another crazy weekend over here in Minneapolis! I started my weekend volunteering. Friday afternoon, for work, we went to a non-profit called Feed My Starving Children.

You basically pack meals for starving children–the meals are sent all over the world. The organization makes it fun but helps us remember how our volunteering efforts are truly saving children’s lives.

After work, I ran home to change and get ready for our first of two weddings. My college friend, Munya married his beautiful bride, Nichole. They had a small, intimate wedding. I cried through the ENTIRE wedding. I usually get pretty emotional at weddings but as I was sitting there at Munya & Nichole’s wedding, I realized my mom wouldn’t be at my wedding. I tried to control myself, because, after all, Munya & Nichole looked so beautiful & happy!

More Volunteering

Saturday morning, we woke up bright and early to go volunteer again, this time with some of Carlos’ business associates. This time, we went to a non-profit called Bridging, Inc which serves families in transition. We built furniture which was donated by Target.

We finished volunteering at 12:00pm and RUSHED home to shower and change for Alexa’s wedding. We barely made it in time for the service—it was another beautiful wedding!

The reception was a little later which gave Carlos and I time to go home and take a couple of deep breaths. I pulled weeds for an hour, showered and before I knew it, was headed out again for the reception.

Shortly after the above photo, my camera died. I was flabbergasted. I felt lost. How would I survive a wedding without my camera?! Luckily, Alexa & Ben had a photobooth at the wedding…

Sunday

Sunday morning, I got up and wanted Carlos to take Iggy and I to the doggy park and then out for breakfast. It was 8am–so I jumped on the bed over and over again until Carlos got up.  We went to the doggy park but unfortunately, we were the only ones there. We played for about 10 minutes and then went out in search of breakfast.

We ended up at the Modern Cafe in Northeast Minneapolis. We love this restaurant–they never have a huge, extensive menu. Just enough to have a variety yet and concentrate on making  each dish individually amazing!

I ordered the special: eggs w/ asparagus, mushrooms, corn & goat cheese.

We got home and while Carlos got lost on his computer, I got lost on mine. I purchased and downloaded Microsoft Office 2010 because I haven’t had Office since January. Lemme say, I already feel so much more productive now that I have access to Word, Excel & PowerPoint again!

After breakfast settled, I got up and headed to the gym. And, for the first time EVER, I wore a tank top to the gym.

I was so self-conscious. My arms are so wiggly from the skin, I prefer to have them all covered up with a sleeve. But yesterdays temperatures led me to believe that, even in a traditional gym, it would be HOT. So, I held my head high and walked into the gym, jiggly arms exposed.

I burned a whopping 425 calories, despite the holy freakiness hotness! I was sweating up a storm, am so glad I wore a tank top!

Today, I’ve packed a bag to get some activity in while at work. After work, I’m going to hit up the grocery store–might even make it a Whole Foods trip this time!

Awww… poo!  My weight is up. More than I expected, too.  +1.2.  That means I weighed in today at 215.2.  I’ve been pretty good about my calories this week, I’ll admit though, I’ve had some higher calorie days.  Ya know, TOM will do that to ya.  :(   I’m also guessing the gain in due in part to the Lia Sophia party my sister and I hosted last night.  You know, those parties always have goodies at them.  I did my best, but pizza was for dinner… and I ate some.  The shame!  Haha  It’ll be fine.  Next week, my bod should be more back to normal.

I have personal training tomorrow morning, I’m actually looking forward to it.  I’ve been lacking in the weights area lately… I’m sure I’ll get a good sweat on.  Adam’s personal training is the session right after mine, so while he’s training, I’ll be getting my cardio in also.  I call that a win.  :)

Tomorrow night, a friend of mine from high school is getting married, so we’ll be celebrating with them.  I’m really looking forward to it.  They’ve been together FOR-EV-ER.  This wedding was a long time coming and I couldn’t be happier for them.

Happy Friday, friends! No worries, I can totally tell you how Red Lobster, Headaches & Weddings all tie together–read on! One more day of good news: I got 20 minutes of the elliptical in + 20 minutes of weights yesterday. That means, I’ve worked out 4 times this week. I’m going to take today as a rest day and then get a run in tomorrow.

Yesterday for lunch, I had a mega salad w/ strawberries & half a can of chicken. I also stopped by the cafeteria and grabbed this:

Do you see those veggies all up on the left side? Anyone know what they are? I ate them, they were good—but I don’t know what I ate. Guesses?

Last night, I was invited to dinner at Red Lobster. I haven’t been to Red Lobster in years. Eh, I take it back, I think I went last year when my brother-in-law, Dan, was craving the all you can eat shrimp. Missy, The Marketing Mama invited me and so we drove together to maximize our talking time. I had a slight headache but was hoping eating would help.

The idea behind last night was to introduce a couple (and by a couple, I mean 4 of us) to some of the changes they’ve made in the past couple of years. I’m talking overhaul of the menu AND the physical dining room decor + the outside of the building. Here’s the food they shared with us.

Lobster Pizza — 90 calories/slice
Maui Laua Shrimp & Salmon — 760 calories/dish

Mango-Jalapeno Shrimp Skewers -- 560 calories/dish

Maple Glazed Chicken — 570 calories/dish

Tilapia in a Spicy Soy Broth -- on the specials menu, no calories.

Dessert: Chocolate Wave Cake, Strawberry Cheesecake & Warm Chocolate Chip Lava Cookie w/ Ice Cream.

I didn’t take pictures of my individual plate each time but I had 1-2 bites of each dish + a bite of each of the desserts. In all, I was impressed that Red Lobster was really concentrating on NON-FRIED options. Here are some additional findings:

  • Nutritional content plays a role in creating the recipe.
  • Nutritional recipes are available upon request.
  • Only 18-20% of menu is fried fish, the rest remain grilled, broiled or steamed.
  • Note on the bottom of their nutritional menu

While dining & hearing about dinner, we had the opportunity to sit with Sr. Executive Chef, Michael LaDuke (yep, this is the guy who’s photo is on the back of the menu.) It was an interesting night however mid-way through dinner, my headache got worse. To the point that I couldn’t even concentrate anymore.

I tried as much as possible to listen because…for petes sake, I was sitting next to the tippy top chef at Red Lobster! By the time we finished dinner & talking, I could barely open my eyes and felt so sick. We all wanted to take pictures at the end, so I smiled and did my best to just be in the present:

While I love the taste, I don’t eat much seafood because I struggle with ideas on how to cook it–dinner tonight made me realize how yummy seafood is and gave me a ton of great ideas–seafood is so light & refreshing, I forget often how much! Besides myself, the other bloggers were:

By the time we got in the car, I thought my eyeballs were going to pop out. I dropped Missy off and came home to go right to bed.

I decided to crash on the couch for a couple hours to get some snuggle time in with Iggy.

I woke up this morning feeling way better although still moving a little slowly. As I mentioned, I’m going to take today as a rest day from workouts because I have an off-site work event at Feed My Starving Children this afternoon.

Weekend plans include a wedding at 6:30pm tonight, a volunteer event from 9am-12pm tomorrow and another wedding tomorrow night. I’m hoping to stay healthy through all of this craziness this weekend. My goal is to workout both days.

I may update this weekend depending on time because I know some of you have wanted to know more about how to get your own bracelet that I showed you earlier this week.
