Mexican makes me happy

ah, happy Thursday my friends! I am so excited about this cookbook – holy crapola it looks so great! It’s finally gotten to a point where I can announce…

TOMORROW IS THE DAY!

It’s been a lot of hard work, hours upon hours of work and will be totally worth the wait!

But just hold on one more day okay?

Wednesday Date Night
Carlos took me out on Wednesday night to one of my favorite restaurants, El Loro. My friend Melinda and I used to eat El Loro 4-5 times a week when we were just out of high school! We would get off work and meet at El Loro where we would proceed to drink & eat normally shutting down the place. We’d get up, go to work and do the same thing over again – ah, good times! Probably what contributed to many pounds.

Anyways, we went last night and I had my fair share of the chips & dip. They have this white spicy ranch-ish type dip that is devine!

I’m a cheap date. I always get 2
soft shell chicken taco’s and
then scrap out the insides.

I swear, I eat enough of the chips to make
up the carbs & calories I’m passing
up
from the tortilla wraps I toss to the side.

Religiously I always get a chocolate
mint on my way out the door.

They have a little container where you put 25 cents in and can take a piece of candy. My favorite way to end a meal: chocolate!

We got home and attempted to watch a
little hulu but after a short period
of
time, I looked like this.

ah, alas I gave in and fell asleep around 8:30pm…but woke up at 8:45pm to do some blog reading, get coffee ready and talk with Carlos a bit more. I’ve just been so flippin’ tired lately! The past 3 weeks have been super early mornings at work talking like AT WORK 2-3 days a week between 6:30am-7:15am and working until 5:30pm-6:00pm or later. I just have to make it through this week and then things should settle back down again. (November is our busy month.)

I have been keeping up with my appointments with Kevin – he mentioned it was a good idea to track measurements monthly so I’ll wait until the beginning of December and check in on my measurements.

Running
Next week is my Turkey Day run. I’m nervous, anxious, excited and all that jazz. I know I can run the race but I’m pretty sure my time will be way more than I want/thought it would be. When I ran that race back in April, I did it in pretty close to 30 minutes. The run I did on Sunday was closer to 35 minutes – I think it was the cold air slowing me down.

Here’s the difference though. Back then, I had about 1.5 years of steady cardio and was pretty well in shape. This race? Well, I’m still in good shape but for most of August & September I didn’t work out. October was getting better but I could tell I lost a lot of traction from August & September.

So what does that mean? It means that no matter the time, I’m just proud I am able to run. Proud that I haven’t given up. Proud that, when faced with an emotional trauma, I didn’t quit. This race next week, it is dedicated to my mom. Who I know will be right there at the end cheering me across the finish line!
