They say it’s your birthday…

by Jen, a priorfatgirl on September 4, 2009

I don’t know why, but I have that song in my head. And those really are they only words I know, “They say it’s your birthday!”

And rightfully so, today – yes, I will admit it here, today is my birthday. I’m trying to smile but really just want to go upstairs and cry. They (whoever “they” are) say that the first year after someones passing is always the hardest because you spend each event, holiday & special day grasping reality of who is NOT there vs celebrating as they would have liked you too. I am going to try my darndest to smile today but have decided to work from home in case I have a melt down.

One year, my mom made a carrot cake on MY birthday and sent it to my sister, Melinda’s work with a note that said whoever ate a piece of cake had to email ME and say “happy birthday, thanks for the cake.” I miss my mom and wish she was here to tell me happy birthday in the super creative way she always came up with.

HOLY HIBISCUS
Remember that hibiscus tree my friends Stacie & Deanna gave me? Well holy super size, it blooms these amazingly beautiful flowers!

They are as big as my head!

Bananana Attack

I love banana’s. Banana bread, banana cereal, banana nut muffins, banana anything and everything. Sometimes I eat 2 or 3 a day. I am pretty sure I love them even more then Amanda, another priorfatgirl who just last week did an ENTIRE POST on banana’s! Crazy gal, she is!

Anyways, the other morning, I was thinking about my breakfast and how when I put my psyllium husk in my oatmeal, it gets SO thick. I add more water all the time but something in the psyllium husk makes it this weird consistency and it doesn’t even come off the spoon!

So I had a brain storm idea (ok, not really brain storm cuz I know most other food bloggers do this so I really think I’m just a little late to the party).

Enter banana into picture…

Mushy mushy smashy smashy

Add oatmeal, psyllium husk (added fiber) and
a little splenda brown sugar

Mix it all together….
doesn’t it look like oatmeal cookie mix?

Add a little water and perfect-o! This helped the
consistency SO MUCH! And, what’s even better is the taste!
How did I miss the banana in oatmeal boat for so long?

Hot Mouth

One of my favorite, scratch that, one of my FAVORITE Smart One Frozen meals is the Chicken Enchiladas Suiza. It doesn’t always look the best but holy mother of all hotness, this has some perfected kick to it!

Not so much that I need to
get me a fire extinguisher but…

I must immediatly follow it up with these:

They are about 19 calories each, so this makes the perfect after lunch snack and it cools my mouth down just enough to be so completely satisfied with both lunch and chocolate.

Now that’s my kinda meal!

This Weekend Events
I know my mom would want me to just turn the music up and dance but bleck, sometimes it’s okay to just maintain status quo. Tonight, I will have a “haven’t.seen.you.in.awhile” dinner with our friends Toby & David and Mandy & Jacques but it’s not a birthday celebration.

Tomorrow night, my mom’s best friend is coming in from out of town so we are going to have a get together at my parents house so I’ll be around lots of family this weekend which makes the world seem like a better place.

Sunday will probably be breakfast with the fam and then Monday which is a holiday here in the states, we will FINALLY go to the MN State Fair which I’ve been talking about for the past week.

I’m not sure yet if I’ll post on Monday; normally I take holiday’s off so we’ll see. In the mean time, please remember to call the person you’ve been meaning to call, hug your friend just a little longer, and take an extra 3 seconds to look your family & significant other in the eye to tell them you love them. We never know what tomorrow will hold – tell them today what you know in your heart.

Love you all!
